Relief of head of Louis Pasteur (whose experiments on fermentation aided the wine industry) carved in the wall of the underground chalk cellars, or crayeres, where champagne is aged, at Maison Ruinart, the oldest champagne house in the world, founded in Epernay in 1729 by Nicolas Ruinart, in Reims, Marne, Grand Est, France. The cellars, originally underground chalk quarries, have constant cool temperatures and high humidity. They cover 8km and 2 storeys, and are a UNESCO World Heritage Site
