Haying on the Riverside Farm, Huron, South Dakota, 1898. Midwest farmers stacking hay with a catapult. The hay is fodder for the animals in the winter, particularly cattle and horses, to replace fresh grass they eat in grazing in the summer. In the 19th century, hay was a commodity needed in cities, by the military, or anywhere there were horses, without access to fresh grass. At right, a woman in a sunbonnet is part of the work crew. At left is a worker manning a horse-drawn hay rake
