Sugarcane processing in the West Indies, possibly Haiti, where a white overseer directs the work of enslaved African Americans in 1749 engraving. In the foreground the cane juice is boiled to reduce it to muscovado. Muscovado was the export product shipped abroad where was refined into sugar or used to make rum. At right, located higher on a hill, is an animal powered mill that extracts sugar juice, which runs down to the boiling operation
