The site where Moet and Chandon wines were disgorged. The traditional French Champagne region method of disgorging wine (removing built-up sediment to make the wine clear rather than cloudy) was a skilled process where the lees caps (a build-up of sediment in the neck of the wine bottle) had to be removed without losing too much liquid
