Baking - Butchers - Cooking - Drink - Food

Feb. 29 New wine aged in seconds - The rough edges of early vine can be smoothed In a flash to give - well, not a vintage product but wine at least palatable. It all done with the aid of a new device which works with powerful light rays, and couldn't be simpler. Wine to be aged is poured into an oblong plastic envelope, placed on special equipment and exposed to a blue-violet light of high wave length - and voila. In 3-6 seconds a wine vastly better. Reverse envelope to expose other side and repeat(the longer wine is exposed, the mellower). The device Is known as a Weberizer after its Inventor George Weber, a German scientist. Model shown is used for experimental purposes, and while purist may blanch, those here who've sipped wine mellowed this way generally give It the nod. Breweries and perfume houses note: what's good for the wine Is also good for beer and perfume. All can be aged in a similar manner. OPS: William Sokolin at his liquor store on Madison Avenue, New York demonstrating use of the aging machine. Sokolin is timing wine - at this stage in the plastic envelope, being exposed to high intensity light rays
