In the days of Elizabeth I - no tavern keeper or brewer was permitted to sell ale to the public before it had been sampled by an official ale-conner. When a new brew was made a pole, or ale stake, was placed outside the premises as a sign the the services of the ale-conner were required and heavy fines were exacted for failure to do so. The ancient Ale-conning ceremony, was held today at the Tiger Inn, Tower Hill
